
I am a hospitality professional with over 25 years experience with both the front and back of house operations of the business. I completed my sommelier training in 2005. Along with a touch of risk taking tempered by a poetic license and an unwavering belief that one can do just about anything when they set their heart and soul into it; I have taught myself the art and science of cooking. I currently live on Salt Spring Island; a BC coastal region rich in sustainable produce and product. I cook on board two sister ships for Bluewater Adventures based out of North Vancouver. I pour and talk about wine at Mistaken Identity Vineyards also located on Salt Spring Island.
The food production chain is really very simple. We plant it; we grow it; we gather it; we cook it; and then we eat it. When this process occurs with a certain immediacy and a minimum of interference, and if it is nurtured by people who are truly passionate about what they are doing, the results can be glorious. My passion lies in the alchemy between the freshest ingredients and the perfect wine pairing.
How food is grown, harvested or slaughtered and packaged, stored, shipped, and handled should be of concern to us all, as residents, eaters and cooks of the planet. One solution is to eat seasonally and locally. Sourcing the ingredients seasonally creates harmony for both the ecology and our appetites!
What I hope to share with you is my experience, passion and love for creating wholesome, delicious recipes and a consciousness of these special places where foods and wines are grown together side by side.Perhaps you will also feel inspired to create your own new recipes from sourcing from your local farm and winery to your table. Go on throw a little caution to the wind!
